When cooking up homemade soups, sauces, purees, and dressings, you may not want a lumpy and uneven texture. The good news? The secret to smooth, professional results is probably already sitting in your pantry.
MasterChef alum and bread King, Theo Loizou, shared the appliance that he swears by for silky smooth recipes.
In our interview, Theo said, “Any high-speed blender. Whether it’s a food processor or a stick blender, it levels up your cooking game without being too ‘techy’.”
Theo believes that technique often trumps complexity, and a great texture can make all the difference to a dish. A good blender is the difference between simple cooking and gourmet results.
“For example,” he adds, “if you’re making a sauce and you finish it off in a high-speed blender, it makes it ten times better. You get a super silky texture without too much effort.”
From soups and sauces to dips and dressings, Theo uses his blender to elevate flavour, texture and presentation. Think velvety purées, emulsified vinaigrettes, or nut-based sauces with a rich, creamy finish.
What is the best blender?
A high-speed blender is the best choice for achieving extra smooth sauces and soups. Brands like Vitamix, Blendtec, or Ninja have powerful motors that break down even tough ingredients like fibrous vegetables, nuts, and seeds into a silky consistency. Compared to standard blenders, high-speed versions can emulsify and blend at a finer level.
How to achieve smooth textures?
To get that super smooth, restaurant-quality texture in sauces or purées, start by cooking your ingredients thoroughly until they’re soft. Then, transfer them into a high-speed blender while still warm. Blend on high for 30–60 seconds, adding a bit of warm liquid (like stock or oil) to help the blades do their work. For even finer results, strain the sauce through a fine mesh sieve after blending. The key is both high power and blending time, so don’t cut it short.
Hot food in the blender
Ensure to check the instructions of your blender before putting hot food or liquids inside, as some blenders are not suitable for hot foods.
