Turn your favourite drink into a dessert with this matcha brownies recipe

There’s no mistaking it, matcha is the new ‘it’ girl drink. But, if you’re not hankering for a cup, you can turn your dessert into a green flavour bomb instead. Clarissa’s matcha brownies have the earthiness of matcha, the sweetness of white chocolate and the decadence of macadamia to keep your sweet tooth satisfied.

Step 1

Preheat oven to 180°C/160°C fan-forced. Grease and line a 20cm square cake pan with baking paper.

Step 2

Place butter and chocolate in a heatproof bowl over simmering water. Stir until smooth. Remove from heat and cool to room temperature.

Step 3

Meanwhile, place sugar in a large bowl. Whisk in eggs, one at time, until thick and creamy. Stir in vanilla and cooled chocolate mixture.

Step 4

Sift flour, matcha powder and salt over wet ingredients. Fold in until just combined (don’t overmix). Stir in chocolate chips and nuts.

Step 5

Pour into prepared pan and smooth top. Bake 25–30 minutes or until centre is just set and a toothpick can be removed with a few moist crumbs. Cool completely in the pan before slicing into 12 squares.

Cook’s tip

  • Use “ceremonial grade” matcha for a bright green colour and best results.
  • Sprinkle the brownies with a touch of sea salt, lightly dust with matcha powder or drizzle with white chocolate for a fancy finish.
