This classic dessert is pure comfort in a bowl. Simple yet indulgent, golden syrup dumplings are the kind of sweet treat that feel like a warm hug, with their rich caramel flavour and melt-in-your-mouth texture. Perfect for cosy nights or when you need an easy crowd-pleaser, this recipe proves that old-fashioned favourites never go out of style.

Combine brown sugar, golden syrup, butter and water in a 2cm deep frying pan on low. Cook, stirring, until butter melts and the mixture combines in a caramel sauce. Remove from heat.
To make dumplings, combine butter, flour and salt in a medium bowl. Using fingertips, rub in butter until the mixture resembles coarse crumbs. In a small bowl, combine milk and vanilla. Make a well in the centre of the flour mixture. Pour in milk mixture and stir until just combined.
Return the pan with the caramel sauce to heat. Increase heat to medium and bring the sauce to a simmer. Using a spoon, scoop tablespoon-sized portions of dumpling dough and gently drop them into the sauce, slightly apart (you’ll need to allow enough space for the dumplings to double in size as they cook).
Cover with a lid and reduce heat to low. Cook for 10–12 minutes or until dumplings are fluffy and a skewer inserted in the centre comes out clean. Turn to coat in sauce.
Divide sauce and dumplings among bowls. Drizzle with cream to serve.
