Squeeze out the sausage meat and roll into heaped teaspoon-sized balls. Heat oil in a large saucepan on medium heat. Add meatballs and cook for 3–4 minutes, stirring, or until browned all over. Add garlic, paprika, nutmeg and oregano. Cook for 1 minute or until fragrant.Â
Add capsicum, passata, tomatoes, stock and dried pasta, then bring to a simmer. Cover and reduce heat to low, cook for 15 minutes. Remove lid and cook for a further 5 minutes or until pasta is cooked and sauce has reduced slightly.Â
Stir in parmesan. Season to taste. Serve pasta with extra parmesan and oregano.
