Easy spinach and cheese hand pie for solo diners

A hand pie is exactly how it sounds- all the best parts of a pie, but easy to hold and eat in your hand! If you’re looking for a one-serving dinner that’s got fibre, protein and easy cooking all rolled into one, then this spinach and cheese hand pie is for you.

Mix all your ingredients, throw on some puff pastry and whack it in the oven. Voila, your dinner is ready!

Step 1

Preheat oven to 220°C/200°C fan-forced. Line an oven tray with baking paper.

Step 2

Combine ricotta, feta, oregano, onion, spinach and dill in a bowl. Reserve 1 teaspoon egg for brushing. Add remaining egg to bowl and mix to combine. Season.

Step 3

Cut a 24cm circle from pastry. Spoon ricotta mixture on one half of the circle, leaving a 2cm border. Brush border with reserved egg. Fold pastry over to enclose filling. Crimp pastry edges to seal. Brush top with remaining beaten egg and sprinkle on sesame seeds. Place on tray, bake 20–25 minutes or until golden. Serve with salad.
